Holiday Fruitcake
Combine 3/4 cup flour, 1/2 tsp. salt, 3/4 tsp. baking powder, 1 tsp. allspice and 1/2 tsp. ground cloves; set aside. In large bowl, cream 3/4 cup softened butter, 6 Tbsps. dark brown sugar and 3 Tbsps. honey. Add 6 eggs (at room temperature), 1 at a time, beating well after each. Add flour mixture and beat until ! smooth. Stir in 1/3 cup brandy. Fold i in 1% cup chopped candied red cherries, 1% cup chopped candied green cherries, 1 cup chopped candied i pineapple, 1/2 cup chopped pitted ! dates and 5 cups chopped walnuts. Pour into microwave Bundt pan. Cook, uncovered, 12 to 14 minutes on full power, rotating 1/4 turn every 3 minutes. Let cake stand at room temperature for 20 minutes before turning out of pan.

Hawaiian Fruitcake is a diversion from the traditional fruitcakes. This cake is baked one layer at a time in the microwave and then spread.
Hawaiian Fruitcake

Microwave Time: 12M> to 15l/2 minutes
1/2 cup butter or margarine
1 (17 to 18-ounce} package yellow cake mix " g
3/4 cup milk
3 eggs
1 cup canned peaches, drained
1 pint whipped cream
1 (20-ounce) can crushed pineapple, drained
1 (3%-ounce) package instant vanilla pudding mix
1 (11-ounce) can mandarin oranges, drained
Line the bottom of three 9-inch round glass baking pans with waxed paper. Grease lightly.
Microwave butter in a 1-cup glass measure at High 30 seconds. Beat together softened butter, cake mix, milk, eggs and peaches about 3 minutes. Pour batter into cake pans.
Microwave each layer at High 4 to 5 minutes. Rotate dish 1/2 turn at 1 minute intervals. Cool layers completely before frosting.
Whip cream until stiff. Fold in crushed pineapple and instant pudding mix. Spread filling between cake layers and on top. Arrange orange slices on top of cake. Chill cake before serving.
Yield: 12 to 16 servings.
