The egg has been considered a symbol of the fertility of spring or renewal of life and a good luck \ charm. It has been worshipped, f used in fortune-telling, sacrificed and feared.
The egg arrived in Virginia in 1607 with the first settlers. Produced by chickens purchased in the Caribbean Islands, eggs soon became a mainstay on colonial farms and menus.
A typical colonial Virginia breakfast was said to feature two eggs accompanied by sausage, bacon, fried bread and kidneys. Eggs back then must have been considerably smaller than ours today when you consider that die recipe for “Lady Russel’s Cake” called for 5 pounds of butter, a quart of cream, 5 pounds of currants and 30 eggs.
The consumable cow
The dairy industry in this country began when Lord Delaware’s “milch cows” arrived in Jamestown in 1610.
Among the colonial favorites calling for milk were cheese sauces and puddings.
