There should be some protein in the breakfast menu. Milk has protein as do bread and cereal products. Egg has been a traditional source of protein but has lost some of its popularity because of the cholesterol content of the yolk.
It is unfortunate that this one negative feature in the egg has overshadowed its many positive ones, Ms. Barton said. An egg contains the highest quality protein, iron, and several vitamins.
A yeast bread may be a better choice than a quick bread, she said, as yeast breads contain less fat. Each popular croissant has 235 calories, of which 108 are in the fat used to make them while each biscuit has 100 calories of which a quarter to half comes from fat.
The dietary guidelines recommend reducing the total amount of fat in the diet.
