Some other burger tips:
• When making burgers for a crowd, shape patties ahead. Arrange in single layer on tray and freeze uncovered just until firm. Remove from tray and wrap tightly in plastic wrap, pressing out as much air as possible, label and put in freezer. If plans are to make a stuffed burger recipe, do not add the stuffing until ready to grill.
• Begin thawing burgers in the refrigerator the day before one plans to use them. Or defrost them in the microwave oven. Plan to use right after defrosting.
