Never thaw food on the kitchen counter — an ideal breeding ground for bacteria.

• Always remember to wash hands before preparing foods. Wash hands and utensils after contact with raw meat. Wash cutting boards or other work-surfaces before reusing them; otherwise bacteria from raw food can spread to other foods.

Much of the information in this article was obtained from “The Baltimore Evening Sun.”

Basic grilled burgers

1 lb. ground beef

1/4 cup minced onion

1/4 tsp. pepper

Combine ground beef, onion and pepper, mixing lightly but thoroughly. Divide beef mixture into 4 equal portions and form into patties 4 inches in diameter. Cook as desired.

Bacon-flecked cheeseburgers

1 1/3 lbs. ground beef

2 strips crisp-fried bacon, crumbled

5 Tbsps. grated Cheddar cheese

Salt and freshly ground pepper to taste.

Place ground beef on a plate and gently spread apart with 2 forks. Sprinkle bacon over meat and toss gently to mix. Divide mixture into 8 portions. Gently flatten each portion with a fork. Sprinkle cheese over 4 of them. Place remaining patties over cheese and press edges to seal. Cook as desired.
