Cake
Preheat oven to 350 degrees. Beat 2 eggs well. Add 1 cup white and 1 cup brown sugars, 1/14 cups of vegetable oil, 1 teaspoon vanilla extract, and 1 teaspoon rum extract. Beat well for 3 minutes. Add 3 cups flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, and 1/4 teaspoon salt until well blended. Batter will get stiff. Add 1 cup chopped pecans and 4 cups chopped Virginia apples. Pour into a greased bundt pan and bake 1 hour for a soft crust, or 1 hour and 15 minutes for a crispy crust.
