Not many people know what cyser is, but it is being made right here in Rappahannock County.

Cyser is a mead-like beverage with its roots in Scotland and Ireland. It is made from apples and honey, water and yeast, and has a light amber color.

Weasel Hill gets their apples from local farms, and their honey from local stands in Sperryville.

Jan Davis and George Farrar, the owners of Weasel Hill Farm in Amissville, never dreamed that their cyser would win the Silver Medal. This was the first competition they had entered, competing with about 20 other cysers from across the country.

A month ago, Davis and Farrar decided to enter their cyser in the Upper Mississippi Mash-Out competition - in Minneapolis knowing it was only their second year of making the cyser. With the faith they had in their product, they won the silver medal.

Weasel Hill Farm cyser is described as off-dry and crisp, gently effervescent with the scents of apples, citrus and honey. If everything goes right with the process, making a batch usually takes between three and four weeks. Then it
