Potatoes are rich in the nutrients of thiamine, vitamin C, niacin and iron. These are best preserved if the potato is cooked unpeeled and left whole. However, the versatile potato can be prepared in many interesting ways.

Some of the more common and favorite preparations are french fries, mashed potatoes, potato chips and baked potatoes. Remember when baking potatoes, though, not to wrap them in foil during baking because this only steams the potato. Instead, the skin should be pierced in several places with the tines of a fork and then placed directly on an ovenrack or cookie sheet.

If your preparation requires peeling the potato before cooking, it is recommended that a vegetable parer be used, keeping the peelings as thin as possible, since a majority of the potato’s nutrients are found close to the skin.

Potatoes are often used as side dishes in a meal, but why not consider them the main course with stuffings of beef stroganoff, barbecue, Italian meatballs, chili, tuna and cheese or chicken, broccoli and cheddar sauce.
