These are the recommendations from USDA. Personally, I wish I weren’t writing about how to ship food to the troops. . .1 keep hoping and praying that they’ll all be home by Christmas and eating their Christmas cookies here in Rappahannock County.

From the various news articles I’ve read, it appears that there is already an overabudance of cookies. One military person was quoted as saying “We’re cookied out.” Some individuals and groups may want to wait until after the holidays to send packages or find other persons to help. No doubt there are other opportunities in our community to help individuals and families with gifts of food.

An alternative to sending food is to send nonfood items like cards, letters, games and puzzles, paper, envelopes, stamps, paperback books and similar things.

Heart-healthy baked goods

At our last session of the Culinary Hearts Cooking Class, we discussed baked goods and desserts. Here are three recipes from the tasting session that were all delicious! I think all of them would be a nutritious treat for the “Holidays.” Yes, it’s time to think about holiday baking!

Spicy angel cake

1 package two-step angel cake mix

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

In large mixing bowl, sift together dry flour mixture from angel cake mix, the cinnamon, nutmeg, ginger, and cloves. Prepare and bake according to package directions. Invert and cool thoroughly' in pan. Remove from pan and cut into eighteen 1-inch slices. If desired, serve each slice with one tablespoon Maple Fluff Topping: stir 1/4 teaspoon maple flavoring into 1 cup frozen whipped dessert topping, thawed. Makes 18 servings, about 85 calories per slice of cake and 15 calories per tablespoon topping.

1 cup unsifted yellow commeal

1 teaspoon baking soda

1 cup mashed ripe bananas (2 medium)

1 cup buttermilk

3/4 cup unsulphured molasses

3/4 cup raisins
