Yogurt dinner rolls 1 cup plain low-fat yogurt 1 tablespoon margarine, cut into small pieces 1/4 cup water 2 tablespoons sugar 1 teaspoon salt 1 package active dry yeast 11/2 cups flour 1/4 teaspoon baking soda 1 egg or the equivalent in egg substitute 1 teaspoon chervil 1 tablespoon grated onion 11/4 cups flour Margarine to grease bowl and muffin tins 1. Heat together yogurt, margarine, water, sugar and salt until margarine is melted. Let cool to just above body temperature (about 105115 degrees FI. 2. In a bowl, combine yeast, 1 1/2 cups flour and baking soda. When heated liquid ingredients have cooled, add to yeast-flour mixture. Add egg or substitute, chervil, celery seed and grated onion. Beat at low speed of electric mixer for 30 seconds. Beat 3 minutes at high speed. 3. Sstir in 1 1/4 cups more flour. Dough will still be moist and a little sticky. Place in a greased bowl, turning once. Cover with a towl or plastic wrap. Let rise until double, about 11/2 hours. 4. Place on a floured board and knead lightly. Divide into 12 even pieces, form into round balls and place in well greased muffin tins. Cover, let rise about 40 minutes. 5. Preheat oven to 400 degrees> F. Bake for 12 to 15 minutes or until nicely browned. Remove from tins immediately. Serve hot or at room temperature. Yield: 1 dozen rolls, 140 calories each. Notes; The rolls freeze well and. go especially well with soups, roasts and low-fat cheeses. Practically any herb or spice can be substituted for the chervil, de-. pending upon what you will be servr ing with the rolls. For example, , caraway seeds would taste good if the rolls are accompanying a cheese sauce. Lemon verbena, while difficult to,, locate, is another delicious substitution.
