How To Buy Ground Beef
Use 70% — lean ground beef in a dish where the beef can be crumbled, browned, and the fat poured off. 70% — lean is the best buy for your money if you can remove the fat when cooking.
Use 80% or 85% — lean ground beef when you want the product to hold its shape and not shrink by losing a lot of fat. Examples: meatballs, meat loaf, or beef patties.
According to USD A, ground beef is rated as extra lean, 15% fat; lean, 23% fat; and regular, not more than 30% fat. If you are uncertain, ask the meat manager at your grocery store to tell you the specific fat content of ground beef products sold in the store.
