Pumpkins are not just for carving and decorating. Cooked pumpkin is used in making breads, pies and other baked goods. Pumpkin seeds can be saved and toasted in the microwave for a snack that's ready in minutes.
Nutrition
Pumpkins are a dark yellow vegetable and a rich source of vitamin A. One cup of pumpkin, cooked or canned, has 80 calories. One slice, one-sixth of a 9-inch pie, has 300 calories.
Preserving
The 1996 Ball Blue Book of Food Preservation states that freezing results in a better product than canning for pumpkin and winter squash and doesn't even give instructions for home canning in the newest Ball Blue Book. Note that this refers to home canning and freezing. Most of the pumpkin that you buy in grocery stores is canned. This is done by commercial canneries .and in such large quantities that canning does result in an acceptable product.
