Pumpkin

Pumpkin is a member of the squash family and is a good source of vitamin A. It can be substituted in any recipe using winter squash. Fresh pumpkin is far supperior to canned in taste and it’s preparation is simple. The pumpkin should be cut in half crosswise and the seeds and strings removed. Place in pan, shell side up and bake in 325 degree oven for about an hour. When pulp is tender and begins to fall apart, scrape from shell and put through a ricer or strainer.

Pumpkin Soup

2 tsp. finely chopped onion

2 tsp. butter

1 cup pumpkin

2 & two thirds cups hot chicken stock

1 cup light cream

1 tablespoon flour

1 tsp. salt

*/• tsp. each ground mace and ground ginger

Chopped chives or parsley

Directions: Cook onion in butter until soft, about two minutes. Mix with pumpkin and stock in the top of a double boiler or saucepan. Blend flour with salt and spices and stir into pumpkin mixture. Combine cream with beaten egg and add to mixture. Cook, stirring frequently, over hot water or low heat, 5 to 10 minutes or until hot. Serve hot, garnish with chopped chives or parsley. Makes 4 servings.
