The vitamin C in fresh oranges is very stable and little is lost when an orange is cut and stored overnight in a plastic bag. Sweet treats don’t have to be gooey desserts or candy. Oranges, which are in plentiful supply now, make easy traveling desserts in lunch boxes. Here is a delicious recipe to try with the zucchini you froze last summer. Zucchini Casserole—Recipe by Mrs. M. B. Fletcher, Washington, Va. 1 quart zucchini diced in sauce pan with 3 tablespoons olive oil, 1 cup' tomato juice, 1 cup chopped onion. Cook until tender with juice cooking down. . Cook Vi lb. sausage made into cakes. Discord grease...set aside to cool. Put in saucepan 1 pint good tomato juice with 1 medium onion chopped, ‘/a green pepper chopped, 1 large tablespoon butter. Cover and cook until tender. While boiling, add thickening made with about ‘/a cup flour and water to make thin paste. Cook until thick, adding sugar to taste (enough to take away the acid taste), and salt and pepper. Crumble sausage, add ‘/a cup hard ground or rolled bread crumbs and ‘/a teaspoon oregano. Rub together well, adding plenty pepper to taste. Grease with butter or margarine a deep pie pan or casserole. Sprinkle lightly with bread crumbs. Put in thick layer of zucchini, then sausage mixture, then tomato filling. Sprinkle with grated sharp cheese then a light sprinkling of bread crumbs.
Put in 37S degree oven and bake until bubbles around edges and slightly brown. This freezes nicely. To reheat, I often heat over a saucepan of hot water then in oven a few minutes. Good
