Combine the chopped peaches and pectin in a large, heavy saucepan. Bring to a full, rolling boil over high heat, stirring constantly. Immediately add the sugar and bring back to a full boil, still stirring constantly. Boil hard for one minute. Remove from heat, add rum and stir for about five minutes. (Betty says this will keep the fruit from floating to the top). Ladel into sterilized jars and seal at once.
