Peach Marmalade
1 orange
2 lemons
2 pounds fully ripe peaches
7 cups sugar
h bottle liquid pectin
Remove seeds from orange and one lemon. Grind chop or slice the fruit, including peel, very finely. Combine in sauce pan with 1 cup water and 2 tablespoons of juice from second lemon and simmer, covered, for 20 minutes.
Chop or grind the peaches, add to citrus mixture. Measure 4/2 cups of fruit combination into large, heavy suacepan. Bring to full, rolling boil over high heat, add 7 cups sugar and continue to boil hard for one minute, stirring constantly. Remove from heat and immediately add liquid pectin. Stir for seven minutes, skimming foam from top. Ladle into sterilized jars and seal.
Jane says the citrus and peach flavors blend well. “It’s not quite as tart as orange marmalade. The peaches tame it a little.”
