Cider is available in two forms - sweet cider and hard cider. Sweet cider is freshly pressed apple juice which has not been pasteurized and may or may not be filtered. It may have benzoate of soda added to it to slow the fermentation process and is usually available only during the harvest season at orchards, roadside stands and farmer’s markets. Hard dder is apple cider that has started or completed fermentation. It has a low alcohol content and is no longer effervescent.
Most often, apple juice and apple dder do not have sugar added. They get their sweet flavor from the sugar that naturally occurs in fresh apples. If sugar is added to the product, it must be stated on the label.
