The largest apple producing section of West Virginia is in the Eastern Panhandle with the maim volume of production being from October through Decemter. The most plentiful varieties are Golden and Red Delicious, Stayman and Jonathan.
There are several varieties of apples, and each has a distinctive flavor and/or texture. All apples should be firm and well colored for their particular variety.

Apple And Raisin Pie
21/2 cups apples 21/4 cups apple cider 21/4 cups water 11/4 cups sugar 2 cups raisins 1 teaspoon salt 11/2 teaspoons cinnamon 11/2 tablespoons fresh lemon juice 1/4 teaspoon fresh lemon peel 3 tablespoons butter 1/3 cup cornstarch 1 double crust pastry(recipe follows) Combine apples, cider, 1 1/2 cups water, sugar, raisins, seasonings, lemon juice and peel and butter and bring to boil. Mix cornstarch with remaining water. Stir in hot mixture. Cook until thick, stirring constantly. Pour into a 10-inch pastry lined pie pan. Adjust top crust. Bake in preheated 460 degree F oven for 10 minutes, lower temperature to 360-degrees F and bake 35 mhK utes longer:.; ", • ■■■**>
Double-Crust Pastry
3 cups flour 1 teaspoon salt 1 cup vegetable shortening 6 tablespoons ice water Mix flour and salt in bowl. Cut in vegetable shortening until particles are the size of small peas. Combine ice water and flour mixture, tossing lightly with fork until mixture holds together. Divide in half; shape in two flat balls and roll between waxed paper.

2 cups fresh apples, diced or coarsely grated 1 cup sugar 1/4 cup salad oil 1/2 cup nuts 1 egg, well beaten 1 teaspoon vanilla 1 cup flour 1 teaspoon soda
