until tender. Drain oysters, reserving liquid. Sprinkle 1/3 crackers over bottom of 9-inch square baking dish. Top with half of mushrooms and oysters. Dot with 1/4 cup butter and repeat layers. Sprinkle last 1/3 crackers on top, dot with last 1/4 cup butter. Combine half and half with reserved liquid and pour over all. Bake 30 to 36 minutes at 350 degrees F. Makes 6 to 8 servings.
Hunt Country Chicken
6 chicken breasts, boned and skinned 1/3 cup flour 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup soybean oil 1 pint oysters 1 cup whipping cream 6 thin slices of ham 11/2 cups grated Swiss cheese
Pound chicken breasts with meat mallet until thin. Combine flour, salt and pepper. Dredge chicken in seasoned flour. In large skillet, saute chicken breasts in oil until lightly browned. Place chicken in 13x9x2 inch baking dish. Drain oysters, reserving liquid. Combine liquid with cream and pour oyer chicken. Place one slice of ham on each chicken breast. Top with equal amount of oysters and sprinkle with cheese. Bake at 350 degrees F. 30 minutes or until hot and bubbly. Makes 6 servings.
