Grate finely the yellow rind of lemons. Squeeze and strain juice. Place lemon juice and rind, sugar and butter in saucepan and cook over low heat until butter is melted and sugar is dissolved. Remove from heat. Stirring vigorously, slowly blend in eggs. Return to low heat and cook, stirring constantly until mixture coats the back of a metal spoon. Cool. Pour into jars. Can be kept in refrigerator 3 to 6 months. To serve, use as a filling for tarts; serve warm or cold over icc cream or pound.cake. Makes 3 1/2 cups.
