PECAN DROPS
- Doris B. Donald, Castleton “I have been baking these cookies at Christmas time for about 40 years. The recipe came from a magazine and is the one my family asks for each year. It is a short, but not too sweet cookie which is very easy to make.”
1 cup pecans 1/2 cup butter or margarine 1/2 cup plus 2 tablespoons shortening 1 cup confectioners’ sugar 21/2 cups sifted cake flour 2 teaspoons vanilla extract Start oven at 325F or slow; chop pecans rather coarsely. Work or cream butter (margarine) and shortening together until smooth. Then beat in the confectioners’ sugar gradually. Stir in the flour thoroughly and add vanilla extract and pecans. Mix well
