For filling: Dissolve gelatin in boiling water; add cold water and sweetener, stirring well. Chill mixture until consistency of unbeaten egg white. Place cottage cheese and cream cheese in an electric blender; process until smooth. Fold into gelatin mixture. Prepare whipped topping according to package directions; fold into gelatin mixture.
For topping: Combine ingredients and stir well. Spoon strawberry topping on cheesecake and chill until firm. Garnish with strawberry halves if desired. Makes one 10-inch cheesecake.
