Potato Water Starter
3 medium potatoes, peeled and cubed „ 1 quart water
l3A cups all-purpose flour
1 tablespoon sugar
1 envelope active dry yeast (1 tablespoon)
In a large saucepan, cook potatoes in water until tender. Drain, reserving 2‘/z cups liquid; set aside to cool. (Use potatoes for another purpose.)
In pitcher or large bowl, combine flour, sugar, yeast and reserved potato water and beat with plastic or wooden spoon. Cover with cloth or U with lid that is slightly «yar and set*'? in a warm, draft-free place. Let/w stand one to two days or until mixture becomes bubbly. Stir mixture several times each day.
To use, remove starter as. needed. Replenish every seven to 14 days by stirring in equal amounts water and all-purpose flour. Mikes' * about 3V4 cups.
