Rhubarb is a spring vegetable that is often called pie plant because making it into pies or tarts are popular ways to prepare it. Rhubarb can also be baked with just a little sugar and water and served with cream or sour cream as a topping.
Rhubarb sauce can be served over ice cream. Rhubarb Fool is rhubarb cooked until tender with sugar and a small amount of water, then chilled and pureed and blended with whipped cream, sour cream or yogurt. It is served very cold as a dessert.
