For those looking for something somewhat different, “High-on-theHog,” from a trailer at the Sperryville Antique Market, heaps handpulled and chopped pork roast on sandwiches or serves pork barbecue spare-ribs.

“We use a Boston butt pork roast,” High-on-the-Hog” owner Jim Hartman of Warrenton said. “We smoke the roast for 12 hours in apple wood and then pull it by hand and chop it into chunks.”

He uses a stainless-steel smoker with an 800 pound capacity. The meat is then flavored with Hartman’s special sauce — rated second in the world by the World Class Richmond Invitational Cookoff in 1989.
