Cook spinach according to package directions, omitting salt; drain. Press dry between layers of paper towels.
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk and whipping cream; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper.
Combine spinach, 1/2 cup sauce, and nutmeg; spoon into a lightly greased two-quart shallow casserole. Top evenly w'ith turkey. Stir 1 tablespoon Parmesan cheese into remaining sauce; pour over turkey. Sprinkle with remaining cheese. Hake at 4(X) degrees for 20 minutes or until browned. Yield: four to six servings.
