Hot Cross Buns 15 Buns: 7/8 cup milk 1 large egg 3 cups bread flour 2 tablespoons sugar 1 teaspoon salt 1/2 cup chopped dried apricots 1 teaspoon grated orange peel 114 teaspoon ground cardamom 2 tablespoons margarine or butter 2 teaspoons bread machine yeast 10 Buns: 3/4 cup milk 1 medium egg 2 cups bread flour 1 1/2 tablespoons sugar 3/4 teaspoon salt 1 /3 cup chopped dried apricots 3/4 teaspoon grated orange peel 1 /8 teaspoon ground cardamom 1 1/2 tablespoons margarine or butter 1 1/2 teaspoons bread machine yeast 1. Place ingredients in machine in order recommended by manufacturer. 2. Set on Dough cycle with no baking. 3. Divide dough into 15 (10) pieces. Shape each into a round ball. Place seam-side down on lightly greased baking sheet. Cover and let rise in warm place until doubled in size, about 1 hour. With very sharp knife or razor blade, make crosswise cut about 1/8-inch deep on each bun. If desired, brush with slightly beaten egg. Bake in preheated 375 degrees oven for 12 to 15 minutes. Cool slightly. Combine 1/2 cup powdered sugar and 1 to 1 1/2 teaspoons hot water. Stir in 1/4 teaspoons almond extract. Place in plastic bag; make small cut in comer of bag. Pipe frosting on top of buns in slits to form cross.
