1/4 cup olive or vegetable oil 1/3 cup red wine vinegar 2 cloves garlic, finely chopped 2 teaspoons salt 1 teaspoon ground cumin 1/8 teaspoon freshly ground pepper
Mix bread, 3/4 of the tomatoes, 1/2 of the cucumber, 1/4 of the green pepper, 1/2 of the onion, the water and the oil in large bowl. Cover and refrigerate 1 hour. Place half the mixture in blender container. Cover and blend on high speed 8 seconds. Repeat with remaining mixture. Stir in vinegar, garlic, salt, cumin and pepper. Cover and refrigerate at least 2 hours. Place remaining chopped vegetables in small bowls. Cover and refrigerate; serve as accompaniments.
