With Easter less than two weeks away the Virginia Egg Council provided me with a host of information on eggs and various recipes which they invited us to share with our readers.

According to the Council the week after Easter is Egg Salad week. If you refrigerate eggs just after hard cooking and leave them out for only an hour or two for Easter hiding or display they will keep for about a week in the refrigerator. Discard any eggs that are cracked or have been out of the refrigerator too long. For perfectly cooked hard cooked eggs they recommend the following:

• Use week old refrigerator-kept eggs.

• Place eggs in a saucepan, covered by one inch of water and cover
