Springtime is also a time for celebrating. Searching for something delicious and convenient to serve for Easter brunch? Why not try baked French toast?
Long ago, cooks down in Cajun country discovered they could rescue their day-old bread by soaking it in a mixture of eggs and milk.
To make French toast egg-stra special, experiment with different stuffings. Using thick slices of bread with a “pocket”sliced through one side. Try tucking in a mixture of cream cheese mixed with honey and walnuts. Or top a layer of cream cheese with sweetened raspberries. You can assemble it early in the day, and simply keep it in the refrigerator until 30 minutes before you’re ready to serve. Pop it in the oven and wait for the compliments. Is there anyone you know who doesn’t love French toast?
Without eggs, so many of our favorite foods would lack the magic that makes them so special. Through their ability to coagulate, eggs bind our favorite meat loaves, thicken our creamy custards, and glaze our homemade biscuits. An important part of so many wonderful meals, eggs really do it all.
Cherry Almond French Toast
1 loaf (12 ounces) Italian bread, about 15 inches long and 4 inches in diameter
8 tablespoons cream cheese
1 can (14 ounce) cherry pie filling, divided
8 tablespoons sliced almonds
4 eggs, beaten
