Salt it down
Besides the cutting up of the meat into the various parts, there were several other major efforts. Preserving the meat was one of the most important jobs. After the hams and shoulders and other parts had sufficiently cooled out and were trimmed up, Dad would have a tub full of salt, sugar, pepper and other seasonings and preservatives. These were applied in copious quantities and the meat was stored in a big, wooden meat box.
