During the cutting process, all the meat scraps were saved and used to make the sausage. Despite what Jimmy Deem does or says he does, we never put hams or loins, or, Heaven forbid, the whole hog in the sausage. The sausage was made entirely from the scraps, and it was better than anything you can buy
