No matter how you eryoy peaches, measures need to be taken to prevent darkening. There are several methods, some more effective than others. The best way is to use a crystalline or powdered ascorbic acid mixture following directions given on the package. Another way is to use any type of citrus fruit juices, such as orange or lemon. But to be effective, this must be used full strength.

Drinks, desserts, jams and cakes are but a few ways this favorite may be used. Here are a few ideas that will surely make your mouth water. We are all familiar with the traditional peach pie. Here are two variations that you will find enjoyable.

Fresh Peach Pie (uncooked)

Combine 3 cups peach slices, 1T. lemon juice and 3/4 cup sugar; let stand 1 hour. Drain. Measure 1 cup of the syrup, add water if necessary to make 1 cup. Add 3 T. cornstarch to syrup and blend. Cook over low heat; add dash salt, 2 T. butter and 1/4 tsp. almond flavoring. Cool. Place peaches in baked 9-inch pastry
