Peach Cream Pudding (Diabetic) Ingredients: 3 eggs, separated 1/2 cup skim milk 1/2 cup water 1 tablespoon unflavored gelatin Sugar substitute to equal 2 teaspoons sugar 1 teaspoon vanilla extract 2-3 medium-size peaches, peeled and mashed Steps in preparation: 1. Beat egg yolks with milk and water in top of double boiler until blended; stir in gelatin. 2. Cook, stirring constantly, over hot, not boiling, water 7 minutes or until gelatin dissolves and mixture coats spoon. 3. Remove front heat. w 4. Stir in sugar substitute1 fend va- * nilla. 5. Chill 30 minutes or until mixture thickens. 6. Blend in mashed peaches. 7. Beat egg whites until they form soft peaks; gradually fold into thickened gelatin mixture. 8. Chill several hours or until firm.
