The mushrooms, if dirty, should be quickly rinsed in cold water and patted dry with paper towels. Gentle brushing with a dry towel is even better, since again, exposure to moisture will cause the mushrooms to spoil sooner. The stem, which is slightly tough, should be removed from the cap and saved to flavor soup stock. Shiitake mushrooms should not be frozen.
