When the Rappahannock County Chapter of the American Heart Association held its kick-off dinner for the volunteers who will be assisting with fundraising during February - Heart Month - they practiced what they preached. The dinner, which was held on Jan. 21 at Trinity Episcopal Church, featured an entree, rolls, and dessert from the American Heart Association Cookbook plus a salad and two low-calorie dressings prepared by Susan McCarthy.
Lean meat
Good lean meat is hard to beat...as an excellent source of protein, vitamins, and minerals, including iron. Therefore, the American Heart Association says “ves” to meat, with a few guidelines to help protect your heart.
According to the American Heart Association, beef and pork are good choices, if you remember to select lean meats with less marbling and less external fat. Even then, you should trim away visible fat before cooking.
