Rhubarb Ambrosia 5 cups chopped rhubarb (about 2 1/2 pounds) 1 1/3 cups sugar 2 tablespoon all-purpose flour 1 /4 teaspoon salt 1 1/2 teaspoons grated orange rind, divided 1 orange, peeled, sectioned and chopped 4 cups bread cubes, divided 1/4 cup butter or margarine, melted and divided 1/2 cup flaked coconut Combine first four ingredients; mix well. Add 3/4 teaspoon orange rind, chopped orange, 2 cups bread cubes, and 2 tablespoons butter, mixing well. Spoon mixture into a lightly greased 8-inch square baking dish. Combine remaining 3/4 teaspoon orange rind, 2 cups bread cubes, 2 tablespoons butter, and coconut; sprinkle over rhubarb mixture. Bake at 375 degrees for 40 minutes or until lightly browned. Serve warm. Yield: 6 servings.
