Daylight Savings Time arrived April 6 and it’s so wonderful to have those extra daylight hours in the evening. With so many outdoor chores at this time of the year, our thoughts turn to simple dinners and one dish menu items served with a side salad. This week we will look at dishes that work well served with just a salad.
There are excellent recipes in . national magazines this month for easy to fix one dish meals. It’s amazing that leftover beef, chicken or turkey mixed with potatoes and/or vegetables can produce an excellent quick and nutritious dinner. And, lets not forget lasagna, spaghetti, etc.
In the last few years stir-fry meals have become so popular. However, there are also lots of old fashioned recipes that feature well balanced meals. I have contacted some Rappahannock cooks this week for their favorite recipes and if you have one you would like to share, give me a call. We welcome suggestions from readers with an idea or a topic for the food column.
