spray. Cook creamed spinach according to directions. Saute garlic in vegetable oil until soft. Combine spinach, garlic, cream cheese, Parmesan cheese, hard-cooked egg whites, red pepper and garlic salt. Pour into pan and bake for 40 minutes. Allow to cool 20 minutes, transfer to an airtight container and place in refrigerator overnight.

To serve: Carve out center of bread loaf. Spoon Dip into center of bread, then use carved-out bread pieces to dip along with crackers or tortilla chips. Hint: Delicious served with sour cream and salsa on the side.

Egg Nog

Serving Eggnog during the holiday is a tradition in most homes, and nothing is more delicious than homemade Eggnog. Toss away your old recipes using Un-cooked eggs and treat your family to this delightful cooked version. Yum!

6 eggs

1/4 cup sugar

1/4 teaspoon salt

1 quart milk

1 teaspoon vanilla

Gamishes/Stir-ins (optional)

In large saucepan, beat together eggs, sugar and salt. Stir in 2 cups of the milk, Cook over low heat (or medium heat over a double boiler) stirring constantly, until mixture is thick enough to coat a metal spoon with a thin him and reaches at least 160 degrees. Remove from heat. Stir in remaining 2 cups milk and vanilla. Cover and refrigerate until thoroughly chilled, several hours or overnight. Just before serving, pour into bowl or pitcher — add stir-ins (opt.). Serve immediately.

For faster preparation, heat milk until very warm before adding to eggs and sugar.

Garnishes and Stir-ins: Plain brandy, rum or whiskey; sherbet, ice cream, or whipping cream; ground nutmeg, chocolate curls, peppermint or cinnamon sticks. Yield: 10 servings.
