Doner Kebab
Doner Kebab literally means “rotating roast meat.” It is much the same as the traditional greek “gyro.” but Selahi prefers the Turkish name because many of us, seeing the word “gyro” might think of the inferior factoiy made sausage used in nany establishments. Doner Kebab is hugely popular in France and by far the most popular fast food in Germany.
If you are on the road and looking for a quick bite to eat anywhere in France, one of your best options are these ubiquitous small store front operations selling doner kebab pita sandwiches, or “sandwiches grec.” The fare is always hot, wholesome, fast and cheap. These somewhat exotic and tasty little fast - but realfood shops are the underlying model behind the Mountain Cafe. In fact the Selahis had just such a family operation in the French city of Rouen before emigrating to the States.
The Mountain Cafe roasts up beef and occasionally lamb on the rotisserie. For the beef, Bijan Selahi, Shana’s husband, marinates the prime rib overnight, cuts it into large slices, which he stacks on the standing rotisserie typical of doner kebab and gyros. The lamb is done similarly, and the shaved, roast lamb is what a gyro is meant to be- vastly superior to commercial gyros. It roasts during the day and Shana shaves it off to order, serving it atop a mound of basmati rice with some grilled tomato, or as a sandwich.
