Altitude
Altitude affects processing. The times given are for use at altitudes of less than 2,000 feet. If the altitude is greater than 2,000 feet, you’ll need to increase processing time. If using boiling water bath canner, add one minute to processing time of less than 20 minutes; two minutes if processing time is more than 20 minutes; 20 minutes for each 1,000-foot increase in altitude.
