Did you know that asparagus is the fifth most popular vegetable in the United States? Have you heard it called “grass” or “sparrow grass”? It is a member of the Lily of the Valley family. The word asparagus comes from the Greek word meaning “stalk” or “shoot.”
This vegetable grows wild in the eastern Mediterranean Islands and Asis Minor and is believed to have originated there. The Romans left directions for growing and drying asparagus as early as 200 BC. Asparagus roots are believed to have been brought to the United States by early settlers. Thomas Jefferson grew this delightful vegetable in his greenhouses at Monticello.
