Saute one sliced onion and 2/3 zucchini thinly sliced in 1/4 cup butter until tender. Sprinkle with garlic salt. Pour this mixture over the crushed cracker crumbs. Beat 2 eggs - season with salt and pepper. Pour over above mixture.
Grate 1 cup Monterey Jack cheese (or your choice of cheese). Sprinkle on top and bake 40 minutes at 375 degrees or until golden brown. Serves 8.
