According to the Virginia Cattle Industry Board, August is Beef Month in Virginia.

Beef is more than what’s for dinner. It’s also a major industry that has a significant economic impact on the American quality of life according to the Cattle Board.

In Virginia, beef production accounts for thousands of jobs in cattle breeding, feeding and processing. The board offers 10 important facts about beef and since beef production in Rappahannock is a key business, we felt readers would like to know these facts.

Fact #1. Beef is much lower in cholesterol than most people think.

Three ounces of trimmed, cooked beef contain 73 milligrams of cholesterol. By comparison, the same amount of chicken, with skin removed contains 76 milligrams; pork, 72; and shrimp 130. The American Heart Association recommends that we consume no more than 300 milligrams of cholesterol daily. Lean beef can easily fit into a heart healthy diet.

Fact #2. Beef is surprisingly low in fat.

An average 3 ounce serving of beef contains only 8.4 grams of fat. This is a small percentage of the recommended 67 gram daily limit in a 2,000 calorie per day diet. A number of the leaner cuts of beef, generally from the loin or round, contain less than 5 grams of fat per serving.

Fact #3. Beef can be a valuable component of a low-fat, heart-healthy diet.

Lean beef is regarded as a valuable part of healthful American diets by the Surgeon General of the United States and the National Heart, Lung and Blood Institute. Beef is a nutrient dense food providing a larger share of the U.S. Recommended Daily allowance of several nutrients than is provided in calories. Beef is an excellent source of protein, zinc, iron and vitamin B-12.

Fact #4: Beef is a safe food product.
