Meanwhle heat large nonstick skillet over medium heat until hot. Add steaks and cook 12 to 15 minutes for medium rare to medium doneness, turning once. Season with 1/2 teaspoon salt.
In large bowl, combine salad greens, cucumber, red onion and reserved dressing mixture, toss to coat. Trim fat from steaks. Carve steaks crosswise into thin slices, add to salad and toss. Serve immediately with pita wedges.
Makes four servings.
Easy Steak Milanese
4 beef cubed steaks (approximately 4 ounces each)
1 egg
1 tablespoon water
1 to 2 tablespoons olive oil
Coating:
1/2 cup seasoned dry bread crumbs
2 tablespoons grated Parmesan cheese
Topping:
1/4 cup chopped tomato
Chopped parsley
Season beef steaks on both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper. In shallow dish, beat egg and water until blended. In second shallow dish, combine coating ingredients. Dip each steak into egg mixture, then into coating mixture to coat both sides.
In 12-inch nonstick skillet, heat one tablespoon oil over medium to medium-high heat until hot. Add steaks, half at a time; cook 5 to 6 minutes, turning once. Sprinkle with tomato and parsley.
Makes four servings.
