• Open the body cavity from neck to vent to remove all innards after freeing them from connective tissue. Be careful in cutting around anal genital area to avoid meat contami nation.
• To skin, work fingers between skin and body until they meet at the back. Then grasp skin in one hand, body in the other. Skin will now break with a sharp tug. The tougher skin on a squirrel should be cut.
• Skin can now be peeled freely in both directions and cut off along with the head, feet, and tail.
