This quick bread is delicious as well as nutritious. It’s fortified with vitamins, minerals and fiber because it’s made from whole wheat flour, plus grated carrots and mashed banana.

1/2 cup margarine 1 cup packed brown sugar 2 eggs 1 cup all-purpose flour 1 cup whole wheat flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon cinnamon 1 cup mashed banana 1 cup shredded carrots 1/2 cup chopped walnuts Beat margarine. Add sugar; beat till fluffy. Beat in eggs. Combine dry ingredients. Add alternately with banana to sugar mixture, beating after each addition. Fold in carrots and nuts. Pour into two greased 7 1/2 x 3 3/4 x 2 inch loaf pans. Bake at 350 degrees for 40-50 minutes. The following recipe is one that a friend served on New Year’s Day since black-eyed peas are a traditional food to “bring good luck” during the year. It’s also a good, hearty stew for this cold winter weather we’ve been having.
