Chopped egg with curry sandwich 6 hard-cooked eggs, chopped 1/2 cup mayonnaise 1/2 to 1 teaspoon curry powder 1/2 cup chopped stuffed olives 1/4 teaspoon salt (optional) 1/4 teaspoon pepper 8 slices of bread, lightly buttered Lettuce, if desired 1. Mix all ingredients except bread and lettuce. 2. Spread between bread slices. Add lettuce, if desired. Yield: 4 sanwiches.
This makes attractive tea sandwiches, too. Cut crusts from bread. Spread between bread slices and cut into strips or triangles. Garnish with sliced olives.
