It’s springtime and time for fresh spinach to pop up in your garden. Fresh spinach is delicate, so treat it gently to retain its flavor and texture. Remember that spinach wilts easily and shouldn’t be washed until just before it’s used.
The easiest way to prepare the leaves is to dunk them in lukewarm water, then blot with paper towels. Never let leaves stay in water long because they become limp and flavorless.

Cooking spinach quickly preserves its color and quality as well as valuable nutrients - vitamin A, vitamin C, and iron. Although the body can’t use iron from plants as easily as iron from meats, you can get more benefit from iron in spinach and other plants by serving them with a food high in vitamin C such as orange juice or a tomato.
