I spoke to the senior citizens at the Rappahannock Nutrition Site on April 29 on “Cooking and Eating Tips for the Diabetic,” since approximately one-third of the participants are diabetic. Since May is Older Americans’ Month, I’d like to share this information with you in my column this week.
What is diabetes?
Diabetes is a disease in which the body does not produce or properly use Insulin, a hormone that is needed to convert sugar, starches, and other food into the energy needed for daily life. When high levels of sugar build up in the blood, heart disease, kidney disease, blindness, nerve damage, and leg and foot amputations from gangrene can occur. So can death.
